Dr. Fei Luo is cofounder and CEO of Liven Proteins, a startup brewing animal proteins without animals to make food healthier and more sustainable. Her team at Liven harnesses precision fermentation to produce collagen, an essential ingredient in food and nutrition. After a decade of using microbes to clean up environmental contaminants, Luo was drawn to a new challenge — the sustainability of our food system. Inspired by the potential of microbes beyond remediation, she founded Liven to create functional ingredients that bridge the health, sensory and nutritional gaps in sustainable foods, transforming them from alternatives into the preferred choices for the future.
